New winter menu, started yesterday, at MIV. You can pick the usual (entree + main), or you can compile your own selection of degustation items from the amuse or entree sections, or you can go with Paul's specially selected 8 course signature tasting menu ($99 per person).
We went with the latter. That menu comprises:
Sashimi of ocean trout, squid ink risotto, blood orange and ginger vinaigrette
Warm southern rock lobster, sweet corn and coriander demi tasse
Rillettes of Broadmarsh corn fed pigeon, mustard fruits and pumpernickel
Tongola goat curd souffle, fingerlime brulee and caramelised dwarf fig
Carpaccio of cured Marrawah beef tenderloin, nicoise salad of green tea smoked yellow fin tuna, butter beans, quail egg and saffron potato
Chilled sake, Ashbolt elderflower sorbet and lime confetti
Blackmore Wagyu beef oyster blade, ponzu sauce, shaved fresh horseradish and pickled ginger omelette
Peanut butter and jelly parfait, vanilla bean tapioca, crushed peanut brittle, salted caramel and chantilly cream
I know you'll accuse me of being the biggest suck in Hobart when I state that this meal was THE best I've ever eaten (so far) in my life.
A huge call.
I am trying hard not to use superlatives here in my description of this meal because I don't want to take away from the experience.
Some comments:
Sashimi - excellent assortment of tastes to start the meal with
Rock lobster - the description doesn't do the exquisite flavours justice
Rillettes - very rich, well complemented by the pumpernickel
Souffle & Carpaccio - as described on menu
Paul very kindly replaced the sorbet with fish of day for us - superb
Wagyu - stunning
Parfait - reading the description from the menu I thought that would be the one I'd give a miss. Tasted it. It would have been my biggest mistake to date if I had foregone that sweetie.
To sum up: I'm not competent enough at expressing myself to speak about the meal tonight. Suffice it to say - go there and try it yourself.

You're no suck Rita. I have also tried the MIV signature tasting menu and it was the finest dining experience I have ever had.
I hope those recipes eventually wind up in a book for the world to share.
I know the crew well at Marque IV well Rita and I would rate a similar meal there as my best in Tasmania. I have had some of those dishes and I agree that some of them are truly great. They really do lift the bar and shame some of their surrounding company.
Josie - great to "meet" you. Thanks for the birthday thoughts. I popped over to your blog. Had a fun read and still lots more to get through. My brother lives in Canberra, so passed on some of your recommendations, as he too is a great foodophile.
Pedro & hrv - glad we're all of the same opinion. MIV really do lift the bar. I'm still swooning about the meal last night.
