Rita is cooking today....

a couple of things....

Testing an idea of a version of the old nursery favourite, Macaroni Cheese. I'm adding a few extra touches, including braised fennel, to the macaroni mix.

I'm also cooking up a dish of my absolutely easiest & tastiest dessert ever - a dish I named 'Piss Easy Sticky Date Pudding' - for obvious reasons! I'll give it to you below, just in case you feel like trying it.

1 cup SR Flour
1 cup fruit (could be dates, could be whatever kind of dried fruit you have there)
½ cup sugar
Mix the above together with enough milk to make a batter.

In a separate bowl mix the following then pour gently over the batter mix in casserole dish:
1 ½ cup boiling water
1 tablespoon butter
½ cup brown sugar

Moderate oven (180) for approx 40 – 50 mins.

How easy is that?

Sounds delicious Rita! My daughter has come home from her day care today with a request for all parents to supply some yummy recipes... I think they'd could do with a "piss easy sticky date" in their next newsletter!

Was it the Fennel Mac & Cheese they did on Radio 936 recently? With the orange zest in the crumbs?

Orange zest in the macaroni....now I know why Pim on her Chez Pim website goes bananas about people messing with classics.

Anon - I think you're absolutely right on that one! Perhaps for general consumption we should be politically correct and rename it - maybe something boring like "Easy Sticky Date Pudding"!

Al - I've already answered your orange zest query by email.

Sir Grumpy - I agree about the orange zest thing. Can't imagine how that could possibly enhance the topping mix for the Mac Cheese. But I'm happy to play round with some classics, depending on what/where/who.

Yes Rita, say ham or bacon in Mac Cheese. Or as my gran did, add smaller tomatoes halved in the mix before baking.
But NO zest of ze orange!
