At the shack, and with a kilo of mussels to deal with, youngest Rita offspring cooked up a storm quite simply by doing the following:
into a large pot on the stove she tossed 1/2 can of coconut milk, 1 chopped onion, 1 clove crushed garlic, 1/4 teaspoon Thai green curry paste, 1 teaspoon sugar, 1/2 cup white wine, a good squirt of fish sauce, the juice of two lemon wedges, a 1/4 cup of water and a bit of chopped parsley (just to make it look pretty!).
She then tossed the mussels into this boiling mix, cooked them for about 3 minutes, and hey presto! It was ready to pig into! So we did.
It was bloody beautiful! Well done, Missy!

Thanks mum!! You know I loved them, so I'm happy you did too!!! Piss easy to make (thats the only sort of cooking I do) and SOOOOOO yummi :) I suggest a nice fresh bread roll to mop up all the good soup too!!! :)
